Summer salad

Ingredients

  • kvinoja (3 boje)
  • beluga leća (crna)
  • mahune
  • list peršina
  • menta
  • cherry rajčice
  • Mardešić srdele u suncokretovom ulju s mediteranskim biljem
  • maslinovo ulje
  • limun
  • mješavina začina
  • aceto balsamico

Preparation

Kvinoju i leću isperite pa kuhajte u slanoj vodi prema uputama na pakiranju (cca 20ak min). Beluga leću također isperite prije kuhanja te kuhajte cca 15ak min, ali nemojte soliti vodu
da leća ne ostane tvrda. Kuhanu leću i kvinoju procijedite, pomiješajte te tople začinite maslinovim uljem, limunom te mješavinom začina prema želji.
Mahune blanširajte 1oak min tako da ih ubacite u kipuću slanu vodu. Ako mahune režete na manje komade, kuhat će se kraće. U svakom slučaju, neka vam ostanu hrskave. Kad su kuhane prema vašoj želji, ubacite ih u ledenu vodu na koju minutu da zadrže boju. Procijedite te dodajte leći i kvinoji. Cherry rajčice narežite polovice ili četvrtine, list pešina slobodno ostavite cijeli, kao i listiće mente te dodajte u salatu.
Sve pomijšajte te dodajte još maslinovog ulja, sok limuna i limunove korice, soli i papra te mješavine vaših omiljenih začina po želji (odlično pašu bliskoistočni začini poput zatara ili slične mješavina). Na kraju dodajte srdele te pokapajte acetom balsamicom.


Spaghetti with salsa and sardines

Ingredients

  • špageti
  • češnjak
  • cherry rajčice
  • Mardešić srdele u bio ekstra djevičanskom maslinovom ulju
  • peperoncino
  • svježi timijan
  • maslinovo ulje

Preparation

Dok se grije slana voda za paštu, na tavu stavite maslinovo ulje, češnjak, cherry rajčice i timijan. Kad zavrije voda, ubacite špagete i namjestite timer na 2 minute manje od onoga što piše na omotu. U međuvremenu vam se u tavi već formirala šalša pa ju lagano podlijte vodom u kojoj se kuhaju špageti. Kad vam zvoni timer, u tavu ubacite srdele i špagete pa sotirajte još 2-3 min da se pašta u potpunosti obloži umakom. Slobodno dodajte još malo vode od pašte – ona će ju napraviti divno svilenkastom.


Mediterranean rolls

Ingredients

  • rižin papir
  • salata 
  • rikola
  • list peršina
  • menta
  • svježi krastavac
  • Mardešić srdele u bio ekstra djevičanskom maslinovom ulju

Preparation

Rižine papire namočite u toplu vodu 1 minutu – dok ne omekšaju. Kad ga osjetite pod prstima da je podatan i mekan, rasporostite ga na ravnu podlogu i presavinite s jedne strane. Na presavijeni dio rižinog papira stavite list salate, rikolu, peršin, mentu, krastavac narezan na duge kriške i očišćene srdele. Neka vam “zelenje” viri malo van rižinog papira. Presavinite suprotnu stranu papira preko salate te zarolajte u rolicu istovremeno stežući salatu da vam rolica bude čvrsta pod rukom.

Poslužite na ovom divnom terrazo podlošku i uz soja sos.


Bruschetta s grillanim tikvicama i srdelama

Ingredients

  • feta kruha
  • češnjak
  • tikvica
  • Mardešić srdela u marinadi od limunovog soka
  • chilli
  • svježi mažuran i origano (ili začin po želji)
  • limunov sok
  • maslinovo ulje

Preparation

Tostirati fetu kruha s obje strane (na suho), natrljati češnjak i pokapati maslinovim uljem. Tikvicu narezati na tanko i grillati na tavi, bez ulja. 

Poslagati tikvice na kruh, dodati srdele, chilli i svježe začine. Pokapati limunovim sokom i ekstra djevičanskim maslinovim uljem. 


Sardine soup

Ingredients

  • 100 g sardines
  • 1 onion
  • 30 g carrots
  • 20 g potatoes
  • Fish stock
  • Salt, pepper
  • 20 g butter
  • 0.1 l cooking cream

Preparation

Sautée all the ingredients with butter. When they begin to soften, add the fish stock and cook for 45 minutes. Mix the soup in a blender and strain it through a fine sieve. Add the cooking cream.


Sardine quiche

Ingredients

  • 100 g sardines
  • 100 g mascarpone cheese
  • 2 eggs
  • Filo pastry
  • Salt, pepper, rosemary leaves

Preparation

Pre-bake the dough in a mould at 180 °C for 5 minutes. Combine all ingredients and pour on the dough. Bake at 180 °C for approx. 20 min.


Sardine pâté

Ingredients

  • 50 g sardines
  • 20 g butter
  • 30 g cream cheese
  • 20 g onions
  • Salt, pepper

Preparation

Sautée the onions and mix everything together into a smooth, uniform paste and let it cool down.


Focaccia bread

Ingredients

  • 50 g sardines
  • 500 g all-purpose flour
  • 500 g bread flour
  • 10 g yeast
  • 20 g dried cherry tomatoes
  • Salt and sugar

Preparation

Mix all the ingredients with lukewarm water, and let it rest. Let it rise a second time and then bake at 240 °C for approx. 20 min.


Carbonara pasta with sardines

Ingredients

  • 2 tins of Mardešić sardines in organic extra virgin olive oil
  • 4 egg yolks
  • 50 g Grana Padano cheese
  • 30 g butter
  • 200 g pasta of your own choice (we used squid ink spaghetti pasta)
  • Salt and pepper

Preparation

Put the egg yolks and grated Grana Padano in a bowl and add the drained sardines while storing their oil in a cup. Use a hand blender to chop all the ingredients into a creamy paste and add the stored olive oil from sardines’ tin. Cook the pasta according to the instructions on the package and save some pasta water. Put a little pasta water in a heated pan and add the slightly undercooked pasta (cooked for about 30 seconds less that what the packaging says). Remove the pan from the heat and stir in the butter. After the temperature has dropped (but is still "hot"), stir in the sardine cream and season with salt and coarse ground black pepper to taste.
